I simply adore Brebichon, a farmstead sheep’s milk cheese that is oh so creamy, delicate and luscious. This apple washed cheese is an absolute must buy on every stop I make to Fromagerie Atwater in Montreal.

Epoisses de Bourgogne – a true treat of divine inspiration

The ultimate in washed rind beauties, this full flavoured cheese that is quite aromatically gifted is a treat any day. It’s the perfect cheese to celebrate with or to enjoy on a random Wednesday. First developed by monks around the 16th century, nearly lost forever after WW1&2, revived in the mid-50’s, and became AOC protected in 1991.   Fun trivia bit: this cheese is rumoured to have been illegal to bring on public transportation based on it’s aromatic strength.  Runny, supple texture, hearty beefy, briny, savoury flavours, this is a true treat of divine inspiration.epoisses

Stitchelton, preserving British heritage cheesemaking

When you see Stitchelton, do not hesitate, just pick it up and buy it. This farmstead cheese is the ultimate homage to preserving the heritage of British cheesemaking. Made in the same region as Stilton, but made with raw milk. This is an ultra creamy/velvety textured cheese with a bright flavour profile, long lasting finish is both highly complex and highly delicious.

Birthday Cheese!

Its my birthday and I am celebrating in the only way I know how- with cheese! I recently had an opportunity to go to a dairy, make some “camembert” and raise them at home myself. Trickier than it seems; managing humidity and temperature levels are critical yet difficult, rogue molds and yeasts are a constant battle in a home environment. One out of 5 turned out as it should and that was a divine birthday treat for sure.
